Apricot stuffing

Note: A fantastic stuffing for people who don't like sage. Goes very well with goose, as well as turkey.

Ingredients

  • ½ oz / 15g butter
  • ½ onion
  • 1 lb / 450g sausage meat
  • 1 lb / 450g canned apricot halves (drained and chopped)
  • 1 oz / 30g fresh, white breadcrumbs
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon grated nutmeg
  • ½ tablespoon finely chopped fresh chives
  • 3 tablespoons double cream

Method

  1. melt butter and soften onion (5–7 minutes);
  2. add sausage meat and cook for 5–8 minutes, stirring frequently, until there are no longer any lumpy bits;
  3. stir in chopped apricots, breadcrumbs, salt, pepper, nutmeg and chives;
  4. cook for a further 5 minutes;
  5. remove from heat and stir in cream;
  6. when you're ready, stuff your bird. (Handy hint: use a metal spoon.)
