Note: A fantastic stuffing for people who don't like sage. Goes very well with goose, as well as turkey.
Ingredients
- ½ oz / 15g butter
- ½ onion
- 1 lb / 450g sausage meat
- 1 lb / 450g canned apricot halves (drained and chopped)
- 1 oz / 30g fresh, white breadcrumbs
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon grated nutmeg
- ½ tablespoon finely chopped fresh chives
- 3 tablespoons double cream
Method
- melt butter and soften onion (5–7 minutes);
- add sausage meat and cook for 5–8 minutes, stirring frequently, until there are no longer any lumpy bits;
- stir in chopped apricots, breadcrumbs, salt, pepper, nutmeg and chives;
- cook for a further 5 minutes;
- remove from heat and stir in cream;
- when you're ready, stuff your bird. (Handy hint: use a metal spoon.)
