Rare Beef with Hot Soy and Chilli

Notes:

  • Serves four (or two with healthy appetites).
  • As an alternative to serving this with salad, heat some noodles in the sauce at the end.

Ingredients

For the beef:

  • 2 sirloin steaks, trimmed of fat
  • 1 tablespoon olive oil
  • sea salt and cracked black pepper
  • mixed red and green salad leaves (rocket goes particularly well)

For the hot soy dressing:

  • 2 tablespoons soy sauce (dark is best)
  • 1 tablespoon Chinese oyster sauce
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 2 spring onions, chopped into matchsticks
  • 1 or 2 mild red chillis, de-seeded and chopped into matchsticks
  • 2 tablespoons salted cashew nuts

Method

  1. Heat grill or griddle or frying pan until hot.
  2. Rub steaks with the olive oil, sea salt and lots of pepper.
  3. Cook steaks on one side until well marked, then turn and cook to your liking. (We like them rare.)
  4. Rest steaks for 5 minutes, then slice thickly or thinly. (We prefer thin.)
  5. Meanwhile, heat the soy sauce, oyster sauce, honey and sesame oil in a pan, stirring to mix. We then usually mix the chilli, spring onions and cashews into the sauce before serving, but you can just sprinkle them on top of the finished meal at the end, if you prefer.
  6. Serve steaks on bed of salad, and spoon over sauce.
