Grandma Gibb’s Swiss Tartlets


  • 4 oz Margarine (or butter)
  • 1 oz Caster Sugar
  • 4 oz Plain Flour
  • A few drops of Vanilla Essence


  1. Beat Margarine and sugar until light and fluffy, then add Vanilla Essence and mix-fold in the flour.
  2. Pipe (or spoon) into paper cases, leaving shallow depression in centre.
  3. Bake at 350°F in a moderate oven for ½ hour.
  4. When cool, sprinkle with icing sugar and fill centre with jam or lemon curd.
