Vinaigrette dressing


  • 1 level teaspoon salt (preferably rock salt);
  • 1 clove garlic (peeled);
  • 1 teaspoon dry mustard powder;
  • 1 tablespoon balsamic vinegar;
  • freshly milled black pepper;
  • 6 tablespoons olive oil.


  • crush salt to a powder, then pound in the garlic to make a paste;
  • add mustard powder, balsamic vinegar and pepper, and mix until salt dissolves;
  • add olive oil;
  • (immediately before using) place in a small, lidded jam jar and shake to blend.
