- 1 level teaspoon salt (preferably rock salt);
- 1 clove garlic (peeled);
- 1 teaspoon dry mustard powder;
- 1 tablespoon balsamic vinegar;
- freshly milled black pepper;
- 6 tablespoons olive oil.
- crush salt to a powder, then pound in the garlic to make a paste;
- add mustard powder, balsamic vinegar and pepper, and mix until salt dissolves;
- add olive oil;
- (immediately before using) place in a small, lidded jam jar and shake to blend.
